Join us for an immersive deep dive into one of Mexico's most celebrated sauces. Top Chef, Manny Barella, will walk you through the traditions behind mole, explore its many variations, and give you plenty of time to ask every question you've got.
You'll spend the majority of your time working on the mole itself, learning the techniques and layers of flavor that make it so extraordinary. We'll also work in some knife skills while prepping the salad.
At the end of class, we'll sit down together and enjoy everything we made. Please note the chicken and rice will be prepared in advance.

About Chef Manny Barella:
Born in Monterrey, Nuevo León, Mexico, Manuel (Manny) Barella took a leap to leave law school and enrolled in a culinary program to pursue his true passion. His natural talent and drive led him on a journey that landed him in kitchens including the luxury Sea Island Resort in Georgia; five-star Napa Valley resort Calistoga Ranch; and Napa’s Michelin-rated Solage Resort. A taste for adventure drew him to Boulder, Colo., where he earned a position at James Beard award-winning Frasca Food & Wine as Chef de Partie before taking on the position of Sous Chef at Uchi in Denver, and eventually, Executive Chef/Partner at Bellota. In 2022, he was named a James Beard Semifinalist in the Emerging Chef category.
In the spring of 2024, Manny was a contestant on Season 21 of Bravo’s Top Chef, one of the premier chef and cooking television competition shows, finishing in the top five among 16 of the brightest and best in the nation.
Today, he brings his vision full circle as the co-owner/chef of Riot BBQ in Denver, Colorado—a concept born from his deep passion for wood-fired meats and bold Mexican flavors. Through Riot BBQ, Barella and his partner, Patrick Klaiber, continue to redefine modern Mexican- American barbecue with fire, soul, and authenticity.
